Reads and Feeds ~ Amber's Edition

This sounds absolutely decadent and it is the recipe that started the idea for this post.

The following is her recipe in her own words :D :

Ok so this is the recipe for the Ultimate Chocolate Cake.. or Death by chocolate cake as I dubbed it. You can add or subtract ingredients as wanted like if its to much peanut butter or choc. chips type stuff. its broken into 3 parts, the cake, the ganache, and the toppings. These are my Aunt's directions. She pretty much made if for dummies. I told her to be specific the first time when she wrote out the recipe for me so I'm just copying what she wrote. So if it seems like well yea no duh she just did it that way because she was giving this out to a few people and was trying to make it as easy as possible.

Pt. 1-

Peanut Butter Bundt cake:

1 box of Betty Crocker super moist chocolate fudge cake mix (you can really use whatever choc. fudge cake mix. we just really like this one)

3/4 cup chocolate milk (whole milk)

1/3 cup melted butter

3 eggs

1- 8oz container sour cream

1- small box instant chocolate pudding (4-serving size)

1 cup semi sweet chocolate chips

1 cup peanut butter chips

1- small bag of mini Reese's peanut butter cups

-Mix all of the above ingredients(except the peanut butter cups) together with an electric mixer

-Pour 1/2 of the batter into the bundt pan (sprayed with no-stick cooking spray)

-Sprinkle the mini peanut butter cups around the cake mix

-top off with the remaining cake batter.

-Bake the cake in a 350 degree oven for 55 to 60 minutes (bake at 325 if using a dark or non-stick pan)

-Cake is done when top springs back when touched lightly in center

-Cool in pan for 10 to 15 minutes

- Turn pan upside down onto a LARGE round plate or serving tray. (you'll need it extra large because the ganache will spread)

-Let it cool completely


Pt.2-

Peanut Butter Ganache:

1 cup Heaving Whipping Cream

1-1/2 cups semi sweet chocolate chips

4 tablespoons butter

3/4 cup powdered sugar

1/2 cup peanut butter (can be either smooth or chunky)

-In a small sauce pan combine all the ingredients (EXCEPT the peanut butter) on a low flame stirring constantly with a wire whisk. Once completely melted, turn up the heat and bring to a boil-STIR CONSTANTLY- this will stick and burn if you aren't careful.

Once it boils-remove from heat- add peanut butter and whisk until mixed completely

Ganache must be cool NOT cold before pouring onto cake. To cool the ganache quickly- place in freezer stirring every 5 minutes or so. it should only take about 15-20 minutes to cool the ganache.

Ladle the ganache over the cake allowing it to "pool" in the center of the cake. Take a rubber spatula and make sure the ganache has coated all sides of the cake.


Pt.3-

Topping on the Cake:

Sprinkle Heath toffee bits-peanut butter chips-semi sweet chocolate chips on the top and sides of the cake.

Also garnish with additional mini peanut butter cups. (all of this which is optional but I LOVE the toffee bits giving it that little bits of crunch.)

Just so you know, this picture doesn't do the cake justice. When Amber sent me the picture, it was upside down. While trying to turn it around, it ended up looking a little flat. Sorry!

  1. ^^ i will go hungry sadly because i'm allergy to several ingredient but i will try a version of it without those for when i do have time ( which right now isn't teh case ( i did spend 4days without eating at all^^,, bad bad i know)
    at teh moment i'm cooking what is quick nd simple because i'm always interrupted and i'm in no mood for special thing ( but now perhaps i will try this oen for christmas or new year dessert even if i don't eat any i'm sure it would please some ;)

    so thank you a lot Brenda for this category of post ( i will send some i'm just trying to find more hours in he days) and for amber for shraing this one with us^^

  3. Where did my comment go, I thought I had just published it and another page came up so if it appears twice it's the gremlins that did it.
    I don't eat chocolate but I will live vicariously through you as you enjoy the cake but you have to tell me all about it.

  4. I love chocolate and your cake sounds delicious. I like using a bundt pan for baking a cake, because the cake looks pretty even without icing. Thanks for sharing.
